Turcos: 5-cups flour 2-1/2 cup lard 1 tspn. ground cinnamon 1 tblspn. baking powder 1 pinch of salt 1 cup hot water Filling to follow Mix the cinnamon, backing powder, salt and the lard and mix well in a blender, slowly add ½ of the flour and ½ of the water. By hand continue to mix in the remaining ½ of the flour and the ½ remaining of the water. Mix well and knead dough into a large ball, cover and rest. Filling 5 cups boiled pork tenderloin (without fat) drain and grind or cut up into small pieces. Add the following: 1-1/2 cups lard 1-1/2 cup dark brown sugar 2 ground up cloves 3 tspns. ground cinnamon Brown the meat in the lard and when done add the remaining ingredients and continue to cook at low heat turning it often so it wont burn. Cool. Now you can add the ground walnuts or pecans and raisins if you want to. Make little balls of the dough and spread with a rolling pen to form a tortilla and add the filling at one half of the tortilla and fold dough and press down at edges to secure that the filling will not come out (like a pie or empanada) bake at 325 degrees for about 15 to 25 minutes depending as desired.
