Spanish Rice:
- 1/2 cup olive
oil
- 6 to 8 large cloves garlic, grated
- 1 large onion, diced
- 1Tbs oregano
- 1 bunch cilantro, copped
- 1 green bell pepper, diced
- 2 cans gandules ( 15 oz size )
- 2 cans chicken broth ( 14 oz size )
- 1 can tomato sauce ( 8 oz size )
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cumin
- 3 3/4 cups rice
In a large pot , heat oil. Add garlic onion, oregano, and bell pepper. cook
until onion is clear. Add beans, broth, tomato sauce, salt, pepper, and cumin.
Cook for 10 minutes. Add rice and cover, bring to a boil. Lower heat and cook 45
min to an hour. Makes about 8 to 12 severing.
