Gorditas de Harina:
4-1/4 Cups flour
2 tsp. vanilla
2 tsp. cinnamon
2 tsp.baking powder.
1 cup shortening
1/2 cup lard
2 eggs
1/2 tsp. sugar
In a large bowl mix the flour,baking
powder, sugar, cinnamom until all are thouroughly mixed. Add the eggs,
lard, shortening and vanilla mix well with the dry ingredients. Add
necessary hot water (about 1 to 1-1/3 cups) and roll in a nice dough ball.
Proceed to make small round balls and roll them out with a rolling pin in order
to make small tortillas. Cook on low heat in on flat grill (comal).
